Where Can I Go To School To Get A Degree In Vegetarian Cooking?

My daughter wants a culinary degree in vegetarian cooking. She has been a vegetarian since age 6. I can find NO SCHOOLS that offer a vegetarian-only cooking degree. Does anyone know of any?
